Where Chef Lou believes the best fish comes from?

In his opinion the Atlantic Ocean and its deep cold water makes for a good tasting, fresh fish. There is good fish all over; Fiji, Eastern Pacific, New Zealand, etc. It’s all a matter of what dish you want to make.
